Healthy Soup Recipes Especially for Winter

In many parts of the country, spring is just around the corner, but first there are a few more snowstorms to endure. Family caregivers and home care providers that are responsible for the health and wellness of an elderly adult are always looking for delicious meals that are healthy, too. When there are a few more weeks of winter left to go, many family caregivers and home care providers turn to soup.

Soup is an ideal food for aging adults. Not only is it warm and comforting, it can easily be packed with healthy vegetables and enriching broth. In fact, soup is one food that can help prevent dehydration in the elderly. The soft texture is also ideal for any aging adult that has problems with dentures or facial paralysis. If family caregivers and home care providers are having a difficult time enticing an elderly adult to eat, chances are a warm bowl of soup and some soft bread will boost their appetite.

White Bean and Green Chili Soup

This recipe is ideal for the slow cooker, so family caregivers can set it up in the morning and forget about it until dinner.

  • 2 C cooked diced chicken
  • 2 C canned Great Northern beans, drained
  • ¼ C canned green chilis, mild
  • 1 C canned corn kernels
  • 6 C low sodium chicken broth
  • 1 C sour cream

In the slow cooker, stir together chicken, beans, chilis, corn and broth until combined. Cover and cook on low for 6 to 8 hours. About ½ hour before serving, stir in the sour cream and replace the lid. Ready to serve after 30 minutes.

Broccoli-Zucchini Cheese Soup

Everyone needs to eat more vegetables, and this hearty soup is a delicious way to reach that goal.

  • 2 C broccoli, chopped
  • 2 C zucchini, diced
  • 2 Tbsp olive oil
  • 1 sweet yellow onion, chopped
  • 2 cloves garlic, minced
  • 5 C vegetable stock
  • 1 tsp lemon juice
  • 1 C shredded Parmesan cheese
  • Salt and pepper to taste

Heat the olive oil in a sauce pot and add broccoli, zucchini, onion and garlic. Cook until the vegetables are softened, about 5 minutes. Add salt, vegetable stock and lemon juice. Bring the soup to boil, then cover and reduce the heat to low. After 25 minutes, add the Parmesan cheese, salt and pepper, then cover. Cook for another 10 minutes. Serve immediately or refrigerate for up to one week.
